1. OPERATION INSTRUCTIONS
This manual covers the following Metos Viking CS -series tilting kettles, both for normal
land use as well as use aboard ships

- 4CS, 6CS, 8CS, 12CS

- 4CS/M, 6CS/M, 8CS/M, 12CS/M

The markings on both sides of the series marking CS, have the following meanings,

- the numbers before the letter C indicates the volume of the kettle in tens of litres
- /M = electric tilting

INTENDED USE OF THE APPLIANCE

Metos Viking CS is a tilting kettle for foodpreparation.

PROHIBITED USE

USE OF THE APPLIANCE FOR OTHER PURPOSES THAN STATED ABOVE

IS PROHIBITED.

The manufacturer of the appliance takes no responsibility for situations that might
occure if warnings and instructions in this manual are neglected.

THE FUNCTION PRINCIPLE OF THE KETTLE

In the lower part of the kettle is a steam generator that produces saturated steam using
electric heating elements. From the steam generator the steam rises to the steam jacket
where the steam condenses on the cold surface of the inner jacket. When the steam
condenses it gives away its heat of vaporization, which goes through the jacket into the
foodstuff.

The intensity of cooking is adjusted with a stepless heat control. The kettle is tilted manually
in the CS models and electrically in the CS/M models.

PREPARATION FOR INITIAL USE

Before using the kettle for the first time, check that there is sufficient water in the steam
generator.

CHECKING THE WATER VOLUME IN THE STEAM GENERATOR

Look out for discharging steam from the filling funnel, if you check the water volyme
after the kettle recently has been in use.

1. Ensure that pan is not tilted.

2. Open the filling funnel tap (1) by turning the knob counterclockwise.
3. Open the inspection tap (2) by turning the handle downwards.
4. Turn the swivel arm of the mixer tap (3) over the filling funnel and open the hot water
tap.
5. When water starts to flow from the inspection tap (2), close the mixer tap (3) and wait
until the water stops flowing before you close the inspection tap.

COOKING

In order to avoid burns:

- Notice that the lid and the upper part of the kettle gets hot during long time
operation.
- Look out for discharging steam when opening the lid.

1. Check that the filling funnel tap (1) is open, so that the air can exhaust from the
steam jacket (not valid for models with steam trap (10)).
2. During the installation a main switch should have been assembled near the tilting
kettle, often on a wall nearby. Ensure that the main switch is in the ON -position.
3. Set the power regulator (4) to maximum position (pos. 6). At the same time the

green signal light (5) comes on.

4. Close the filling funnel tap (1) when steam starts coming out amply (not valid for
models with steam trap (10)).
5. Adjust the intensity of cooking from the power regulator (4).
Pay attention to the reading of the pressure gauge (6) during cooking and lower the
power if the pressure rises to the red area of the scale (not valid for models with
pressure switch).
If the pressure rises to the red area of the pressure gauge the safety valve will open
temporarily, steam will discharge into the kitchen and the need for adding more
water to the steam generator will increase.
6. After cooking turn the power regulator (4) to 0 -position.

Keep the lid closed during cooking, because an open lid will increase the energy-
consumption considerably.

TILTING

Before tilting or returning the kettle to the working position, check that nothing is
in the movement area or leaning against the moving part of the tilting kettle.

Turn aside the swivel arm of the mixer tap and open the lid (models with hinged
lid) before tilting the kettle.

Do not stand in front of the pouring lip when tilting the kettle.

The tilting is carried out by turning the handwheel (8) (model CS) or the tilting lever
(model CS/M) counterclockwise. The kettle is returned to its original position by turn-
ing the handwheel or tilting lever clockwise.

When tilting the kettle the heating is switched off and will be switched on again when
the kettle is in horizontal position.

EMERGENCY STOP ( only /M models)

When you press the emergency stop (9) the tilting will stop immediately. To release the
emergency stop turn the button in the direction of the arrow.

HAND-SHOWER (optional accessory)

The Metos Viking CS kettle can be equipped with

a hand-shower to make cleaning easier. The on/off
shower switch is the trigger (21) of the shower pistol. 22 21

OPTIONAL EXTRAS

The following optional extras are available for the Metos Viking CS tilting kettle:
- Baskets for potatoes, vegetables etc.
- Lifting handles for the baskets
- Strainer plate
- Measuring rod

CLEANING AND MAINTENANCE

Stainless steel is composed of iron, chrome and [Link] with oxygen from the air
chrome forms an oxide layer on the stainless steel surface protecting it from corrosion.

Most often the corrosion attacks in areas where food, water, salt, crust etc. stays for a longer
period unremoved. Most damaging are acid food residue and salt.

Therefore always add salt to hot liquid and do not leave liquids containing salt
overnight in the kettle.

DAILY CLEANING

A scraper, soft brush, cleansing cloth, drying cloth and a water hose or hand-shower are
recommended as cleaning instruments. A slightly alkalic cleansing agent (pH 8-10) is most
suitable.

Scrubbing cleansing tools and agents, strong acids, chloric agents or salt should not
be used as they violate the preservative coating.

Water usage on the control panel must be avoided.

THE USE OF A PRESSURE CLEANING JET IS STRICTLY FORBIDDEN.

1. If necessary, let the kettle soak and scrape off possible food residues that have been
stuck to the kettle surface.

2. Clean the inner and outer surfaces and the lid with a brush or cleansing cloth.

3. Rinse the inner surfaces with plentiful of water and the outer surfaces with the
cleansing cloth.

4. Dry the outer surfaces using the drying cloth and the inner surfaces by heating the
kettle slightly.

In order to make the cleaning easier and to prevent burn-on it is recommendable to

use container spray when preparing food containing milk.

MAINTENANCE

In order to avoid burns:

- Notice that the lid and the upper part of the kettle gets hot during long time
operation.
- Look out for discharging steam from the outlet pipe of the safety valve when
you check the function of the valve.

The function of the safety valve is checked by boiling water att max. power once a week.
This will rise the steam jacket pressure to 1 Bar causing the safety valve to open and
discharge steam.

Ask an authorized person to carry out the following checks:

The function of the safety valve (7, fig 1) must be checked at least 4 times a year:
1. Open the safety valve when the steam generator is under pressure by raising the red
plastic lever.
2. As the steam is released (noise, pressure gauge (6, fig 1) reading decreases) let the
plastic lever return to the down position.

Rinse the steam generator 2-3 times a year:

1. Open the outlet tap (11, fig 1), situated behind the inspection tap (2, fig 1).
2. Let water flow through the filling funnel (1, fig 1) in ample measure.
3. Screw the outlet tap back to its place and check that it is not leaking.

IF THE APPLIANCE DOES NOT FUNCTION

If the appliance does not function, check the following

- Has the appliance been used according to the instructions?

- Are all possibly removable parts refitted?
- Are the mains switch on the appliance or nearby - often on the wall - in the ON
position?
- Are the circuit breakers (fuses) of the appliance in the electrical supply central
in working order? Ask an authorized person to check the circuit breakers.
- If even this does not help, figure out in advance how to briefly describe the
break down and contact an authorized service person.

THE APPLIANCE DOES NOT INCLUDE ANY USER SERVICEABLE PARTS

INSIDE. SERVICE MUST BE LEFT TO AUTHORIZED SERVICE PERSONNEL.

SHUNTING OUT THE APPLIANCE

The destroying of the appliance when the economical lifetime has been reached must be
carried out in accordance with local rules and regulations. Taking care of substances
that might be harmful to the environment if not properly handled and utilization of
materials that are reusable is best done by using professional personnel spezialized in
recycling.
