[installer]: change default FSShiftMethod to shiftfs

[installer]: prepare releasable binary

Makefile is used as a convenience for ensuring correct builds for
all supported platforms. Introduced option to embed the versions.yaml
as the objcopy method doesn't work in cross-platform builds
